THE GREEK OLIVE OIL 

Olive trees have been cultivated in Greece since ancient times. For the ancient Greeks, the olive tree represented, among other things, peace because of its tranquility. It was so highly valued that the winners of the ancient Olympic Games were awarded a wreath made from a branch of a wild olive tree.

Archaeological excavations in many areas have proved that olive oil was extensively used in ancient times. It was not only used as food. Homer calls it 'the gold liquid' and according to ancient texts it was used in cleaning, making perfumes, beauty care, medicine and lightning. Hippocrates, the famous doctor of the ancient world, used olive oil to treat his patients.

Today the olive is the most extensive agricultural product in the country. Greece produces about 400,000 tons of olive oil annually and it is the third largest olive oil producer in the world. The conditions for growing olives and the methods of producing olive oil have changed very little over the years. 75% of the production is of excellent quality and can be consumed without any processing. Greek Virgin olive oil is a natural, full-flavored product, with a pleasant aroma and many nutritional properties. 

Today, research has shown that olive oil has beneficial effects on our health. The constant consumption of it protects against heart disease, it is easily absorbed by the body and has positive effects on the stomach.  

Greeks adore olive oil, which is the basis of their daily diet. According to research Greece is the country with the highest per capita consumption of olive oil in the world.  

Olive oil can be consumed raw in salads. It is usually combined with either lemon or vinegar to make a delicious salad dressing. Two tablespoons of pure virgin olive oil is enough for a large Greek salad. Olive oil is also perfect when cooked to make all kinds of vegetable dishes such as spring beans, okra, peas and aubergines.  

Olive oil is also suitable for making sweets. It is much better than margarine or butter in cakes, tarts and sweet pies. One cup of olive oil is enough for a medium sized chocolate cake.
